Meringue

Pies with meringue are not appealing to me at all.  Raw egg whites with sugar and fluffed on top of a delicious lemon, chocolate or coconut cream pie just needs something else.  I like to whip heavy cream and add to the pies, and then I just want that fluffy white meringue, but please not raw egg whites.  I was thinking this last weekend; years ago I used to make a meringue which was used with raw egg whites adding a jar of marshmallow cream.  Then I had this thought, what if I used the Wilton Meringue Powder and added the marshmallow cream.  So, I did it and I made a lemon pie and added this twist to a meringue.  I love it, and I had some fun creating this, you can too, come on, let’s have some fun!

2 tablespoons Wilton Meringue Powder
½ cup cold water
1 jar of marshmallow cream

Mix in a bowl with an electric mixer the water, Wilton Meringue Powder, and 1 tablespoon of marshmallow cream.   Beat on high for approximately 5 minutes .  Add the entire jar of marshmallow cream and beat another 5 minutes.  The meringue should have stiff peaks and ready to spread on your pie.  Bake in a 350 degree oven until peaks begin to golden brown.  Do not burn.

Let cool before serving, refrigerate any leftovers, if there are any left over to refrigerate.

A great dessert wine served with this lemon pie is so rewarding at the end of a hard long week of work!

Gourmet Chicken Sandwich

My daughter and I ran errands in the Montrose area of Houston today.  We had to stop for lunch and found a cute little sandwich shop off West Gray.  I have a lot viewers from all over the world, of course not everyone can go to this great little sandwich shop and make memories with family or friends.  I would like to offer you a sandwich inspired from this quaint sandwich shop, in order for you and the ones you love to have some fun!

Let’s Have Some Fun!

Purchase from your local grocery
Honey Wheat Bread

Prepare Chicken Breast on a grill or a George Forman grill
Bleu Cheese
Honey mustard – if you have my cookbook use my recipe for honey mustard
Cooked bacon strips
Fresh apple sliced
Spinach Dip recipe from my cookbook

Thinly slice the cooked chicken breast
Spread your honey wheat bread with honey mustard and the spinach dip
Spread over the honey mustard the spinach dip
Crumble Bleu Cheese over the spread
Place a  layer of chicken breast over the spreads and bleu cheese
Place 3 slices of cooked bacon over the chicken
Peal and core 1 apple of your choice
Slice thinly ½ the apple of your choice over the bacon
Your sandwich is complete
Grab a soda of your choice and a bag of chips and totally enjoy!

Remember every time you sit down to a meal enjoy and have some fun!  Totally!

Fettuccine Alfredo

Recently one day grocery shopping I ran into a dear friend, and she and I stopped to chat and get somewhat caught up with our families.  She had my cookbook, and asked "why I had not published my Fettuccine Alfredo"?  I had published the Chicken Marsala in my cookbook, and left out the Fettuccine Alfredo!   In the days of having my restaurant, Fettuccine Alfredo and Chicken Marsala were always served together.  My friend had worked with me at the restaurant and this was one of her favorites.  So, in her honor, I do not want her to wait until I publish a second edition, I share with her and all of you!   Back in the  days of having my restaurant, truly this was the hardest work I have ever experienced in my life, but I can definitely express to you, we were having some fun!  Friday nights were exhausting, but we never laughed so much.  We had to laugh to keep from crying!   This recipe goes out to all my family, friends, and customers that were there for me while I had my restaurant!

4 tablespoons of flour
4 tablespoons of salted butter
4 cups of heavy cream
1 cup of grated Asiago cheese
2 teaspoons of Lawry’s Seasoned Salt
1 teaspoon of white pepper
½ teaspoon of granulated garlic

1 pound box of Fettuccine cooked and drained. 

Melt the butter in a saucepan and add the flour.  Lightly cook over low to medium heat.  Slowly whisk the heavy cream and cook until slightly thickened.  Add seasonings and cook until bubbly.  Turn off the heat and stir in the Asiago Cheese.  Toss immediately with cooked Fettuccine and serve with my Marsala Chicken from my cookbook.  I prefer tossing the Fettuccine and the Alfredo Sauce with one serving at a time.  If sauce becomes too thick, add additional heavy cream to the consistency you desire. 

This recipe is not intended to eat often.  The calories and fat content are quite indulgent.  Save it when there is a special occasion and you just want to have some fun!  Of course a bottle of wine highlights the fun!  Enjoy my friends!

Puff Pastry Gruyere and Hickory Farms Summer Sausage

Okay, we are planning for bunkering in this weekend, enjoying the Superbowl on TV.  Well, I can say I will enjoy the  planning and cooking for the big event.  Try this to serve before the game.

Have you received gift baskets for Christmas containing Hickory Farms Summer Sausage Rolls?  Well, you may enjoy this recipe in order to use those Hickory Summer Sausage Rolls.  Remember, you cannot forget, just have some fun!

1 box of frozen puff pastry.  Place in refrigerator over night in order to work the dough easier
3 tablespoons of Grey Poupon Dijon Mustard
3 tablespoons of honey
½ to ¾ pound of Le Gruyere Switzerland cheese – grated
1 - 10 ounce roll Hickory Farms Beef Summer Sausage with has been sliced with a Mandolin Slicer

Lightly flour a cutting board with flour.  Roll out ½ of the puff pastry until the pastry fits on a parchment lined jelly roll pan (10X15).

Brush with a pastry brush the puff pastry with mustard and honey mixed together.
Layer evenly the Hickory Farms Beef Summer Sausage and then evenly spread the grated Le Gruyere Cheese.

Top with Puff Pastry which has been rolled out to fit the bottom 10 X 15.  Cut slits on the top for releasing the heat and preventing the puff pastry  puffing out.

Bake at 350 degree oven for 30 minutes until puff pastry is browned all over.  You may need to bake longer.  Keep your eyes on the puff pastry.  Let cool for 15 minutes, slice with a pizza roller.  Enjoy with a glass of wine! 


Dewberry or Blackberry Pie

1 - 9 “ unbaked pie shell
1 ½ cups Dewberries or Blackberries
2 eggs – well beaten
1 ½ cups sugar
½ cup canned milk
½ cup flour

Topping
1 stick of butter (salted)
1 cup of flour
1 cup granulated sugar

Place dewberries or blackberries in the 9” unbaked pie shell.  Combine sugar, eggs, flour and canned milk, mix well and pour over berries in the unbaked pie crust.  

Cut into cubes the butter which is cold from the refrigerator.  With your hands mix the butter, sugar and flour until crumbly.  Sprinkle evenly on top of the berries and cream and bake in a preheated 350 degree oven for 1 hour until crumbs are browned.
